Healthy Muffins

 

Coconut Blueberry Muffins

Ingredients

-1/2 cup of Coconut Flour
-4 ½ tablespoons of Coconut Oil
-6 Organic Eggs
-4 tablespoons of milk (coconut milk, etc. or if can have dairy) or water
-1/2 teaspoon Apple Cider Vinegar
-1/2 teaspoon Baking Soda
-1/4 teaspoon Baking Powder
-1 teaspoon Cinnamon
-1/4 teaspoon sea salt
-2 tablespoons Raw Honey or Stevia (optional)
-1/2 cup of blueberries


Combine all wet ingredients into a large bowl
Combine all dry ingredients in a separate bowl
Mix together wet and dry ingredients
Add fruit and stir
Pour the batter into muffin pans
Bake at 200 degrees for 10-15 minutes

Being pregnant with my second child I am finding that I am hungry all the time. I have been looking for some healthier options to bake as I am starting to crave sweet food. I am trying very hard not to put on 20kg like I did with my first child. I found this recipe using coconut flour and gave it a go. My husband was not keen on the idea of changing how I bake. He loves his cakes but surprisingly they were very tasty and seems to be keeping me away from chocolate. :)
